Individual Tiramisu Cups


Possibly the most famous Italian desert, Tiramisu is a light boozy sweet made of ladyfingers dipped in coffee, layered with a whipped mixture of cream, sugar and mascarpone cheese, then dusted with cocoa. Levels of marsala wine are optional to personal taste.

Ingredients: 250g mascarpone cheese 240g whipping cream 150mls cooled espresso coffee 30mls sweet marsala wine +1tsp 60g icing sugar 1 packet lady finger biscuits 1 tsp vanilla extract 1 tsp instant espresso powder Cocoa powder to dust

Method: You will need 6 glass ramekins.

Prepare the 150ml of espresso coffee and allow to cool, then mix this with the marsala wine


.Place the cream, icing sugar and espresso powder in a bowl and whisk until soft peaks form.


Mix the mascarpone cheese with the vanilla, 1 tsp of marsala wine and then add this to the cream. Whisk again until soft peaks form, (don’t over mix!)

Cut the lady finger biscuits so they fit into the ramekins, then dip them quickly into the coffee mixture on both sides. If they sit for too long in the coffee they will become soggy.


Place these at the bottom of the ramekins, then spoon some of the mascarpone mixture on top, followed by another layer of biscuits and mascarpone mixture. I piped the second layer of mascarpone.


Place in the fridge for a few hours to set and then top with a light dusting of cocoa powder before serving.
